Dromoland Castle Estate Announces Landmark Transformation
This November, Dromoland Castle will commence the largest redevelopment in its 63 years as a luxury hotel. The 16th-century property’s €55 million transformation will span accommodation, public spaces, wellness, culinary concepts, and cultural programming.
New culinary experiences
Exciting new dining concepts will be led by the resort’s recently appointed Executive Chef, Kevin Fleming, whose 20 years of international culinary experience will shape a new chapter for dining at Dromoland. His approach will place Ireland’s seasonal produce at the heart of a culinary journey that brings together the best of local produce interlaced with a contemporary sense of occasion.
At the heart of the renovation will be a 3,200-square-foot glass-enclosed Atrium, opening in July 2027. Reimagining the historic courtyard as the new social heart of the Castle, the light-filled space will bring a relaxed sense of energy and conviviality to the property throughout the day and into the evening. Guests will be invited to linger over morning coffee and light bites before the space transitions into an atmospheric setting for evening cocktails and live music.
A new Grill restaurant will introduce a more immersive dining experience, centred around an open show kitchen and live-fire grill. The menu will showcase the quality and provenance of Ireland’s finest ingredients, from expertly dry-aged Irish meats to seasonal vegetables. As part of this commitment, the third Walled Garden will be brought back into purposeful use through a new Dromoland Farm concept, growing produce for the estate’s kitchens and strengthening the connection between Dromoland’s land, gardens and table.
Meanwhile, Dromoland’s signature Earl of Thomond restaurant will return to a theatrical era of fine dining, with refurbished surroundings providing the stage for a renewed programme of tableside experiences. Guests can look forward to timeless classics brought to life with a contemporary touch, including Crêpes Suzette flambéed tableside, Pressed Duck and an elegant cheese service.
A refined collection of rooms & event spaces
An elevated portfolio of guestrooms and suites will increase Dromoland Castle’s accommodation offering from 96 to 121 rooms and suites, complemented by the estate’s two private lodge experiences. Rooted in the Castle’s architectural evolution and Ireland’s country-house tradition, the redesigned accommodation will combine contemporary luxury with a strong sense of place.
Timeless interiors will be brought to life through a palette of regional materials and craftsmanship, including Connemara marble, bespoke metalwork, linen, wool and velvet.
Working alongside local craftspeople, the design will weave elements of Dromoland’s heritage and surrounding landscape into each space, creating rooms that feel connected to their setting and distinctly of their time. Just a five-minute walk from the Castle, the newly created Walled Garden Collection will introduce 13 spacious guestrooms within the converted former stables.
Set alongside Dromoland’s centuries-old walled gardens, the collection will offer a private retreat, with own-door entrances and patio areas providing a sense of seclusion and connection to the estate.
The new Heritage Collection will add a further 16 guestrooms, including five suites, occupying a newly constructed floor opposite the Castle’s main entrance. Designed to complement the character of the property, select rooms will feature private balconies overlooking the estate. All public areas in the luxury hotel will also see a reimagined interior journey, along with a refurbishment of the Brian Ború Hall, the hotel’s ballroom & event space, and the addition of two new meeting rooms for corporate and group events.
A renewed focus on wellbeing and immersive estate experiences
Wellness will become a key focus in Dromoland Castle’s next chapter. New wellness rituals designed to support sleep, recovery, emotional wellbeing and vitality will be unveiled in a new thermal expansion of the award-winning Castle Spa. Each will combine advanced thermal therapies, bespoke therapist-led rituals and advanced technology to create personalised, multi-sensory experiences.
As part of the phased development, two glass-fronted saunas will debut on the shores of Lough Dromoland, the property’s private lake, creating a natural connection between thermal experiences and wild swimming.
Building on traditional pursuits such as falconry, archery, boating and whisky tastings, cultural programming will expand with experiences rooted in Ireland’s history, craftsmanship and countryside traditions. Guests of all ages can sign up for Irish language lessons, embroidery workshops celebrating Irish textile traditions, art classes and gun dog demonstrations.

As part of the redevelopment, the castle will close for a 6 month period between November 2026 and June 2027, whilst Dromoland’s 18-hole championship golf course, club house and leisure centre will remain open along with Dromoland’s private Lodges.
