Executive Head Chef David McCann has been overseeing the kitchens at Dromoland Castle since 1995.
David has been a major part of the Dromoland Castle evolution over the years, which has greatly helped in developing Dromoland’s world renowned reputation.
David trained in London in the 80’s and early 90’s, principally at the Connaught Hotel in Mayfair, which gave him a great foundation in classical European cuisine. This classical style was well suited to the Dromoland stage and has, with David’s creative touch, evolved into the unique dining experience that is The Earl of Thomond Restaurant.
In 2013, as part of the Castles 50th anniversary as a resort Hotel, David published ‘The Dromoland Castle Cookbook’ featuring favourite dishes based on locally sourced produce, simplified, to replicate at home.
