Executive Head Chef David McCann has been overseeing the kitchens at Dromoland Castle since 1995.

David has been a major part of the Dromoland Castle evolution over the years, which has greatly helped in developing Dromoland’s world renowned reputation.

David trained in London in the 80’s and early 90’s, principally at the Connaught Hotel in Mayfair, which gave him a great foundation in classical European cuisine. This classical style was well suited to the Dromoland stage and has, with David’s creative touch, evolved into the unique dining experience that is The Earl of Thomond Restaurant.

In 2013, as part of the Castles 50th anniversary as a resort Hotel, David published ‘The Dromoland Castle Cookbook’ featuring favourite dishes based on locally sourced produce, simplified, to replicate at home.

Another cornerstone of David’s success is his loyal and supremely talented Brigade of Chefs

Nickie Flynn

Senior Sous Chef, from Birmingham, England and previously worked at St. Andrews, Scotland is an extremely gifted, hardworking and dedicated ‘Dromoland’ Chef. Nickie ‘fits in’ because he believes in using fresh, in season, local ingredients merged with his inspiration and modern ideas that are firmly grounded is proper basic European cooking techniques, and he loves it!

Head Pastry Chef, From Sri Lanka, worked at the Royale Mirage, Dubai and Le Gavroche Restaurant London, has graced our pastry kitchen with his supreme artistic talents since 2008.

Chandy, as he goes by, has a ‘no fear’ approach to pastry. His natural ability with sugar, chocolate and presentation coupled with his acutely trained palette allow him to create pastries and desserts that quite simply are sublime! Not to mention the show stoppers at special events.

Tony started his career in the late 60’s and has worked in a number of high calibre establishments in both Ireland and Germany. When working in another five Star in 1989 he was approached to come and work at Dromoland Castle as Restaurant Manager. Under Tony’s careful guidance The Earl of Thomond Restaurant offers a relaxed but elegant dining experience, where every detail is attended to under Tony’s excellent guidance maintaining the highest standards of service and customer care.
